Riceland Foods, Inc., Lecithin Division a natural emulsifier produced from soybeans and is used in a broad range of food applications. This company manufactures a full line of deoiled and fluid lecithin for use in dairy products; uses include production of instant milk powder, as well as cheese, ice cream, and cream and butter productions.

Cheese products become very sticky at high moisture levels. This makes the stacking and slicing process difficult. Capitalizing upon its surface-active properties, Riceland Foods, Inc., Lecithin Division used effectively as the release agent in cheese. The phospholipid molecules of lecithin reduce surface tension and provide a barrier between interfaces.

Lecisperse 3236 is a low-viscosity fluid lecithin that functions ideally in this application. The product can be spray-applied during cheese processing to achieve uniform distribution over cheese sheet surfaces.
