DSM Dairy Ingredients for Award-winning cheeses

The Delvo-Tec Bulk-Set system offers media and cultures which have already been tested for compatibility and enables cheese producers to source from a single, reliable supply. Cultures and media from DSM Dairy Ingredients, a business unit of DSM Food Specialties, played a prominent role in the success of a number of award-winning cheeses at this year's Wisconsin Cheese Industry Conference held on 15-16 April. The show, which attracts entries from across the globe, saw four ‘best of class' winners including Cheddar, Colby Longhorn, Mozzarella and Gorgonzola using Delvo® Tec Bulk-Set starter cultures with other prize-winning cheeses benefiting from DSM's DelvoLac® and DelvoStart™ media ranges. The Delvo range is designed to deliver premium performance together with reliable and cost-effective quality. The Delvo-Tec Bulk-Set system offers media and cultures which have already been tested for compatibility and enables cheese producers to source from a single, reliable supply. The system is designed to offer maximum flexibility in a robust environment for predictable activity in the cheese vat and high protection against phage. In addition, award-winning Münster and Baby Swiss cheeses both incorporated Delvocid®, an antimycotic mould inhibitor which contains the active compound natamycin. Delvocid has no odour, taste or colour, so it does not interfere with the natural appearance and ripening process of the end-product. Its low solubility in water makes it an ideal surface treatment since it does not penetrate the cheese.
