For enhanced flavor, acidity development or viscosity producing ability, the company modifies traditional cultures by combining them with newly identified single function strains. This provides improved flavor and body with the advantages of faster fermentation times. These modified cultures compose the majority of the company's culture line. They are durable under a wide range of processing conditions and formulation changes.

For unique cultures to fit extreme processing or formulation changes, the company can develop new, custom cultures. Cultures have been developed to meet new time constraints, enhance body in minimally stabilized products, reduce bitterness over the shelf life of cheese, maximize flavor and body in low- and non-fat products, and minimize yogurt culture acidity for more flavor perception.
