Dairyland Continuous Use (CUC) Bulk Starter Cultures contain carefully selected strains of Lactococcus lactis subsp. Lactis or Lactococcus lactic subsp. cremoris lactic acid producing bacteria which provide for maximum acid and flavor production with strong bacteriophage resistance.
Dairyland Continuous Use (CUC) Bulk Starter Cultures contain carefully selected strains of Lactococcus lactis subsp. lactis or Lactococcus lactic subsp. cremoris lactic acid producing bacteria which provide for maximum acid and flavor production with strong bacteriophage resistance. These cultures are suited for the production of Cheddar, Colby, Cottage and similar style cheese varieties. The cultures are designed to replace multiple strain culture rotations by utilizing the same strains to manufacture cheese throughout the day and every day without rest. They are certified Kosher and Dairy by the Union of Orthodox Jewish Congregations of America.
