Bulk Culture Systems for Cheese

Provided as frozen cultures, these bulk set systems are available for both mesophilic and thermophilic applications. Mesophilic starter cultures containing Lactococcus cremoris and/or lactis strains are used in the production of hard and hard ripened cheeses.

The company offers two types of mesophilic bulk cultures. The rotational/multiple strain culture system packages several strains in one can to help combat bacteriophage, the naturally occurring virus that attacks lactic cultures. Strains in the Continuous Use Culture (CUC) system are individually packaged; three strains are combined for use as a pure culture. In the event of a phage attack, a strain with similar activity, but with a different phage sensitivity pattern, can be immediately substituted.

Producers of mozzarella and other Italian-type cheeses depend on UltraGro SC/SR/SH thermophlic cultures. They are packaged individually and offer the added benefit of strain substitution in the event of a phage attack.

The culture media formulas optimize bulk culture activity by stimulating superior culture growth and activity. Formulas with "phage inhibitory" systems prevent phage attacks in the starter tank.
