BelGioioso Introduces Burrata Cheese

Denmark, WI – Derived from the Italian word for butter, Burrata (pronounced boor-AH-tah) is known for its creamy, soft center and rich flavor. "We often look to traditional regional favorites in Italy when we are developing new products, and Burrata fits perfectly with our current cheese line" says Errico Auricchio, president of BelGioioso Cheese, who moved his family from Italy to Wisconsin in 1979 to start the company. Also in line with consumer demands for quality and authenticity, this domestic variety is made using a time-tested recipe from a cheesemaker who has long specialized in Burrata. "There really is an art to making Burrata," explains Mimmo Bruno, Specialty Cheesemaker for BelGioioso who was brought to the company in part to help perfect its Burrata recipe. "It's a delicate cheese, filled with fresh cream that must be carefully handled. Also, each eight-ounce ball is hand-formed, so it requires a definite skill for the right balance of ingredients and consistency."

BelGioioso's Burrata lends itself to a wide range of menu applications. For a simple yet striking appetizer presentation the cheese can be cut into pieces and drizzled with olive oil and a sprinkle of salt and pepper and plated atop a nest of arugula greens. It also makes for a unique alternative to buffalo mozzarella, whether sliced and centered on a plate or bowl of hot pasta or added to flatbreads and specialty pizzas.
