| Case Study: Biofilm Control Strategies In Beverage And Dairy Processing | Bacterial biofilms cause a number of serious problems for industrial fluid processing operations. Mechanical blockages, impedance of heat transfer processes and biofilm induced corrosion result in billions of dollars of losses each year. Product spoilage and possible risk to public health are also consequences of biofilm-mediated contamination. This brief article will review aspects of biofilm control strategies for Clean-in-Place (CIP) in the beverage and dairy industries and introduce a promising disinfectant via case studies. By Susan B. Rivera, PhD, and Andrew K. Boal, PhD, MIOX Corporation | 09/02/2010 | 452.6 KB |
| Article: Cheese Anyone? | Texture of cultured dairy products, such as cheese, is a very important characteristic to most consumers. Texture is a physical property that is usually characterized by sensory evaluation, but it may also be measured by mechanical testing. Optimally, the test results of both methods should be well correlated. This article considers how mechanical testing can affect the quality of the results and how these results correlate with those of sensory evaluation. | 08/23/2010 | 1.48 MB |

| Case Study: Checkweighers Save Bagel Manufacturer Lots Of Dough | One wholesale bagel baker in the Pacific Northwest attributes its success to their willingness to go the extra mile to meet their customers’ quality standards. In this case, that extra mile was represented by over-apportioning dough to ensure that the finished bagels were at or above the specification weight. This policy was good for customer satisfaction, but not very good for profitability. By Mettler-Toledo Hi-Speed | 02/10/2010 | 42.3 KB |
